Marinated Cucumber and Melon Salad

  • Manoline or chopping knife
  • Perry Knife
  • Cutting board
  • Large Mixing/Serving bowl

Ingredients
  

  • 1 medium English Cucumber(s) (thinly sliced)
  • 1.5 cups Radishes (thinly sliced)
  • 1 small Sweet Honeydew Melon (cut into slices)
  • 1/2 cup Mint leaves (cut into strips)
  • 1/2 cup Fresh lemon juice
  • 2 tbsp Sugar

Instructions
 

Prep

  • Thinly (but not too thinly) slice mellon, cucumber, and radishes.

  • Cut mint leaves into strips

  • Measure out 1/2 cup lemon juice and 2 Tbsp sugar

Combine ingredients

  • Combine all ingredients into a large mixing bowl and stir
  • Add mint garnish and chill two hours

  • Yield 1/2 cup per serving

Notes

A Manoline was used to cut the cucumber, melon, and radishes.  You can slice by hand.
I found that slicing too thinly causes the ingredients to stick together in a big "mashy" kind of way.  1/8 thickness or more is preferred.
